The current requirements of industrial biocatalysis are related to economically beneficial and environmentally friendly processes. Such a strategy engages low-temperature reactions. presented approach is essential, especially in food processes, where temperature affects the quality nutritional value foodstuffs. subject study hydrolysis lactose with commercial lactase NOLA™ Fit 5500 (NOLA). complete decomposition into two monosaccharides gives sweeter product, recommended for intolerant people those controlling product’s caloric content. reaction was performed at 15 °C, which milk transportation storage temperature. enzyme showed activity over entire range substrate concentrations (up 55 g/L lactose). For reusability easy isolation, encapsulated sodium alginate network. Its stability allows carrying out six cycles monosaccharides, lasting from four hours.
